Arpacas cu spanac si ciuperci [reteta vegana / de post]

Arpacasul este ingredientul principal al colivei, insa se pot prepara cu acesta o multitudine de alte retete vegetariene, vegane sau de post, atat ca si fel principal, cat si desert.

Arpacasul este una dintre cele mai vechi cereale din lume, fiind consumat acum cateva mii de ani de popoarele din Orientul Mijlociu si Africa. Chiar daca nu este la fel de popular ca si alte cereale, grau, ovaz sau quinoa, arpacasul are o multitudine de beneficii pentru sanatate. Are un continut ridicat de fibre, minerale (seleniu,mangan, cupru, fosfor), vitamine si antioxidanti.

Arpacasul ajuta la imbunatatirea digestiei (datorita continutului ridicat de fibre), previne bolile de inima, ajuta la imbunatatirea sistemului imunitar, fiind benefic impotriva bolilor de piele.

INGREDIENTE PENTRU PREPARAREA ARPACASULUI:
  • 200 g de arpacas
  • o cana de apa
  • 450 ml de supa de legume (se poate prepara si dintr-un cub de legume peste care se adauga apa fierbinte)
  • putin cimbru

ALTE INGREDIENTE:
  • 200 g de ciuperci
  • 150 g de spanac
  • o conserva de fasole alba
  • o ceapa alba
  • 2 linguri de ulei de masline
  • 2 catei de usturoi
  • cimbru dupa gust
  • sare si piper dupa gust
  • optional: parmezan sau fulgi de drojdie inactiva


MODALITATI DE PREPARARE:


Arpacas
  1. Intr-o cratita incapatoare, pune la fiert arpacasul impreuna cu apa, supa de legume si putin cimbru. 
  2. Dupa ce a dat in clocot, da flacara aragazului la foc mic, pune un capac si lasa sa fiarba inabusit aprox. 50-60 de minute.
  3. Dupa ce a fiert, zdobeste-l putin cu o furculita.
Restul legumelor
  1. Intr-o tigaie, incinge uleiul de masline si caramelizeaza ceapa.
  2. Adauga apoi usturoiul si ciupercile taiate si condimenteaza cu sare, piper si cimbru dupa gust.
  3. In momentul in care ciupercile sunt facute, adauga arpacasul gatit si amesteca bine.
  4. Adauga si converva de fasole si amestecacu grija pentru a nu se zdrobi.
  5. La final adauga spanacul si mai lasa pe foc aproximativ un minut.
  6. Optional poti presara deasupra parmezan ras sau fulgi de drojdie inactiva.
